Chococco Fat Bombs
A delicious LCHF treat to try. Keeps well in the fridge and works great as a treat in a lunch box or for a get-together!

A word from The Whole Food Dietitian, Caryn: For those of you that need that extra carb hit, particularly if you’re doing the type of exercise that requires added oomph for those high intensity moments, these “bombs” are for you. For the less active of us, these should still be considered sweet treats.

Ingredients
- 1 cup (250ml) Cream
- ⅕ cup (50g) Butter
- ⅖ cup (100g) Coconut oil
- ⅘ cup (200g) 85% dark Chocolate, broken in pieces
- 1/3 cup (20g) desiccated coconut
- Cocoa or coconut threads for rolling
Method
In a pot add the cream, butter and coconut oil and slowly heat until it begins to bubble. Pour the hot mixture over the chocolate pieces and whisk vigorously to incorporate the ingredients are nicely mixed together.
Add to the mixture the desiccated coconut, mix well and set in a container or in individual moulds like an ice cube tray.
Chill the mix completely in the fridge before cutting into bite size pieces or roll into bite-sized balls. At this point you can roll them in some coconut threads or cocoa – or simply transfer them as they are into a container with a tight fitting lid and storing them in the fridge for up to 2 weeks.

Hi Andy,
we normally use coconut cream in place of cream if necessary as it has a similar consistency, but you may need to adjust the amount, depending on the brand used.
